Ingredients

Serves 41 tablespoon of extra-virgin olive oil1 pound of ground chicken breast (93% lean ground turkey is also great)1 small red bell pepper, seeded and cut into small dice½ a medium red onion, finely chopped1 teaspoon of dried oregano¾ teaspoon of ground cumin½ teaspoon of garlic powder½ teaspoon of crushed red pepper flakes2 tablespoons of tomato pasteOne 15-ounce can tomato puree ½ teaspoon of honeyOne 15-ounce can of pinto beans, drained and rinsedJuice of ½ limeKosher salt to taste4 whole grain rolls or buns

For serving:½ cup of grated sharp cheddar (optional) 1 romaine heart, finely chopped1 ripe avocado, pitted, peeled and sliced

Directions

1. Heat the oil in a large skillet over medium heat. When the oil is hot and shimmering, add the ground chicken and cook for about five minutes, stirring and breaking up the meat with a spatula until it's no longer pink.2. Add the bell pepper, onion, oregano, cumin, garlic powder and red pepper, and cook for about six minutes until the vegetables begin to soften. Stir in the tomato paste and cook for one minute (just to mellow the acidity), then stir in the tomato puree, honey and pinto beans. Let it simmer for 10 minutes to allow the flavors to mingle and the sauce to thicken slightly. Turn off the heat and stir in the lime juice. Taste and season with a little salt if needed.3. Pile the chicken mixture onto the rolls and top with cheese (if using), romaine and avocado. 4. Get sloppy.
